Potato And Lentil Curry Recipe (Vegan)

This is a great dish if you are vegetarian/ vegan,
or just doing Meatless Mondays.
It's super delicious and packed full of protein.
Even my meat-lover of a boyfriend loves this dish!



 Serves 4

Ingredients
  • 1/2 Onion
  • 1 Tin Tomatoes
  • 125g Brown Lentils
  • 1 tsp Ground Cumin
  • 1 tsp Ground Coriander
  • 1 tsp Curry Powder
  • 1 tsp Chilli Flakes
  • 1 tsp Paprika
  • Fresh Parsley (optional)
  • 2 tbsp Cooking Oil 
  • Salt And Pepper To Taste
  • 8 Baby Potatoes
Method
  1.  Chop onions and fry in the oil with the spices until soft.
  2. Add the lentils, tomatoes, salt, and pepper.
  3. Add water until the lentils are completely covered.
  4. Bring to a simmer and cook lid on for 10 minutes.
  5. Quarter the potatoes and add them to the pot.
  6. Continue to simmer for 20-25 minutes or until the lentils and potatoes are tender.
  7. You may have to check as it's cooking to make sure there is enough liquid as the lentils absorb a lot of liquid, add water if need be.
  8. Adjust seasoning to taste.
  9. Serve with fresh parsley and rice (optional)
