Slow Cooked Spicey Beef Neck Stew Recipe
I love making dishes like this.
It takes quite a while, but it's definitely worth the wait.
You could cut down the time by doing it in a pressure cooker,
but I haven't tried this one in a pressure cooker,
so that variation won't be in the recipe.

Ingredients
- 1/2 Onion
- 500g Beef Neck
- 2tsp Ground Cumin
- 2tsp Ground Coriander
- 1tsp Curry Powder
- 1tsp Paprika
- 1tsp Chilli Flakes
- 1 Bay Leaf
- 2tsp Sugar
- 1 Tin Tomatoes
- Salt And Pepper To Taste
- 50ml Red Wine (optional)
- 15ml Oil
- Fresh Parsley (optional)
- 12 Baby Potatoes
- Finely chop the onion.
- Fry onion and spices in the oil until the onions are soft.
- Add the beef neck and brown.
- Add the tomatoes, wine, bay leaf, sugar, salt, and pepper and top up with water until the meat is completely covered.
- Cook on a medium heat, lid on, for 2-3 hours, or until the meat is tender.
- You may have to check the level of liquid throughout the cook and top up with water to make sure it doesn't burn.
- Add the potatoes about 35mins from the end of the cook.
- Once the meat is tender and the sauce has reduced, stir in chopped fresh parsley.
- Taste and season accordingly.
- Serve with rice.
- Garnish with more fresh parsley (optional)
